Tachilhuil is a word that comes from one of the 68 indigenous peoples of Mexico, specifically from Nahuatl, and it means handmade stew and this is exactly what this food is, it is prepared with pork entrails cooked with spices, red recado and tomato , is thickened with roasted and ground corn and can be served hot or cold. It is a flavor for not just any palate, it is exotic and has a very unique character.
